Hello fabulous Human Hi readers, I'm ERIC IENCO, I would say I'm effervescent, enthusiastic and exceptional, and I lurrv everything I put in my mouth, whether it’s juicy tomatoes or relishing roasties all food is worth celebrating with celebrities!

I hail from Shepparton, Australia, I have Italian roots, and l was taught how to cook by my mother and grandfather. It was a visit to the UK that brought me into contact with household names.

Fresh off the plane and within 24 hours I was simmering sauces and packing lunches for music legend Sting and his wife Trudie Styler, it was fabulous being given free reign of King Sting’s stove and was so naughty singing with my wooden spoon in between causes, he he he!

Anyway my flamboyant personality and cool culinary skills were an instant hit.  I served as their butler and cook, cruising the world taking care of the couple and their close circle of intimate friends.  For two fabulous years I co-ordinated visits to the family from triple A List stars including Sir Elton John, Sir Bob Geldoff, Brad Pitt, Jodie Foster and Stevie Wonder.  So I got to know what makes Elton’s mouth water, Pitt’s palette poised and what Foster’s food fantasies really are!

Once I was ‘loaned’ to Dustin Hoffman, lick lick, and his family while they were on holiday in Italy. “A memorable experience”…… I had to serve up for Bruce Springsteen during a New York visit and whisked a few eggs for Charlene Spiteri (Texas) and a few nibbles for the gorgeous Stella McCartney.

In 2000 I landed THE job in London with Madonna as the house manager and cook, oh my god it was massively momentous!

During my time there I prepared the superstar’s (Queen Madge) favourite feasts including a scrumcious salad while she was pregnant.  More Madonna moments in the pipeline so keep hooked as the months digress.

I had to leave Her Majesty to travel and catch up with family and friends in Australia. More recently I have been seen on Living TV’s Jade’s PA, ITV’S This Morning and on Australia 9am With David and Kim.  I’ve just shot a one hour special for The Truth About Beauty, well just look at me darling – it’s all about what we eat!

I'm now joining the Fabulous team at humanHi to share my amazing journey with A List celebrity's and I will share with you some of their favourite recipes and stories, oh goody but I hope they don’t start gagging me, wouldn’t that be terrible!  I love a good gossip! 

You know what they say, if you can’t stand the heat, get out of the kitchen! 
This month's recipe is Madge's Favourite so l named it after her.  Have a go at cooking it up, it’s so easy! 

MADONNA’S MIXED SALAD

Ingredients
175g of mixed salad levees
2 large hard-boiled eggs
¼ cup of chopped black olives
1 can of (390g) Artichoke heats (washed and cut into ¼)
1 avocado


For the dressing…
Juice of ½ a large lemon
2 tbsp of olive oil
Pinch of sea salt

Method
Cut the avocado in half remove the stone and skin. Cut the avocado into thick slices. Wash the caned artichoke hearts under some cold running water, cut into ½.
Peal your hard-boiled eggs and cut them into half them again into threes. In a large bowl combine the salad the chopped olives, artichoke heats’ avocado and the hard boiled eggs.

Drizzle the dressing over it.
Mouthwateringly delicious, and healthy too!
